Pumpkin Gratin

Ingredients

1 large pumpkin, peeled and cut into 2cm cubes
1 tbsp plain flour
4 tbsp olive oil
2 garlic cloves, crushed
4 tbsp chopped fresh parsley
Salt and freshly ground black pepper


Instructions  

1.      Preheat the oven to 180°C, gas mark 4. Place the pumpkin in a large bowl and add the flour. Toss the pumpkin in the flour until it is evenly coated (your hands are easiest for this).

2.      Drizzle with the oil, add the other ingredients and mix together well. Turn into a shallow ovenproof dish and spread the pumpkin out evenly.

3.      Bake for 40-45 minutes, until the pumpkin is tender and the top is golden.
