Pumpkin Loaf
Ingredients
450g pumpkin, peeled, deseeded and
cut into chunks
500g sugar
200ml vegetable oil
3 large eggs
375g plain flour
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp baking powder
1 cup coarsely chopped walnuts (optional)
Instructions
1. Steam or microwave the
pumpkin flesh until tender and then purée in a food
processor. Allow to cool.
2. Preheat oven to 180°C.
Grease and line two loaf tins. Beat sugar and oil in large bowl to blend. Mix in
eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and
baking powder into another large bowl and stir into pumpkin mixture. Mix in
walnuts, if desired.
3. Divide mixture between
the two tins. Bake for about 1 hour 10 minutes or until skewer inserted into
centre comes out clean. Remove the loaves from the tins and allow to cool.
